Beet Salad with Goat Cheese

Main Ingredients
- 4 medium beets trimmed and washed
- ¼ cup goat cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Preheat the oven to 400°F (200°C).
Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
Let the beets cool, then peel and slice them.
In a mixing bowl, combine olive oil, balsamic vinegar, salt, and pepper.
Add the sliced beets to the bowl and toss to coat.
Transfer the beets to a serving plate and sprinkle with crumbled goat cheese.
