Instructions
Melt the butter in a large pot over medium heat. Add the chopped onion and cook until softened.
Stir in the flour and cook for a couple of minutes, stirring constantly.
Gradually whisk in the chicken broth and beer. Bring to a simmer and cook until thickened.
Add the shredded cheddar cheese, heavy cream, Worcestershire sauce, and dry mustard. Stir until the cheese is melted and the soup is smooth.
Season with salt and pepper to taste. Serve hot.
