Ingredients 

Main Ingredients

  • 2 lbs Beef Chuck cut into cubes
  • 2 tablespoon Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove and set aside.
  2. 2. In the same pot, add onions and garlic. Cook until onions are translucent.
  3. 3. Stir in tomato paste, thyme, and rosemary. Cook for 2 minutes.
  4. 4. Return beef to the pot. Add beef broth, carrots, and potatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender. Season with salt and pepper to taste.
