Ingredients 

Main Ingredients

  • 1 kg beef shank cut into chunks
  • 1 piece onion quartered
  • 2 pieces potatoes peeled and quartered
  • 1 bunch bok choy separated
  • 1 piece corn on the cob cut into 4 pieces
  • 2 tablespoons fish sauce
  • 1 teaspoon black peppercorns
  • 8 cups water
  • to taste salt

Instructions 

  1. 1. In a large pot, bring water to a boil. Add the beef shank and cook until scum appears on the surface. Skim off the scum.
  2. 2. Add the onion, fish sauce, and peppercorns. Lower the heat and simmer for about 1 to 1.5 hours or until the beef is tender.
  3. 3. Add the potatoes and corn. Continue to cook until the potatoes are tender.
  4. 4. Add the bok choy and cook for another 2-3 minutes. Season with salt to taste.
  5. 5. Serve hot with rice.
