Beef Empanadas Recipe

Empanada Dough
- 2 cups all-purpose flour
- 1 teaspoon salt
- ½ cup cold butter, cubed
- ⅓ cup cold water
Beef Filling
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ cup beef broth
- ¼ cup raisins optional
- ¼ cup green olives, chopped optional
- 1 egg, beaten (for egg wash)
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, combine flour and salt. Add cold butter and mix until crumbly. Gradually add cold water until dough forms. Wrap in plastic and chill for 30 minutes.
3. In a skillet, heat olive oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned. Add cumin, paprika, beef broth, raisins, and olives. Simmer until liquid is absorbed. Let cool.
4. Roll out dough and cut into circles. Place a spoonful of beef filling in the center of each circle. Fold dough over and seal edges with a fork.
5. Place empanadas on a baking sheet. Brush with beaten egg. Bake for 20-25 minutes or until golden brown.
