Ingredients

  • 3 lbs Beef chuck roast cut into chunks
  • 4 cups Beef broth
  • 3 Dried guajillo chiles stemmed and seeded
  • 2 Dried ancho chiles stemmed and seeded
  • 1 Dried pasilla chiles stemmed and seeded
  • 1 large Onion quartered
  • 5 cloves Garlic peeled
  • 2 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground black pepper
  • 2 tablespoon Apple cider vinegar
  • 2 pcs Bay leaves
  • to taste Salt

Instructions 

  1. 1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2 minutes.
  2. 2. Soak the toasted chiles in hot water for 20 minutes until softened.
  3. 3. Blend the soaked chiles, onion, garlic, oregano, cumin, black pepper, and apple cider vinegar until smooth.
  4. 4. In a large pot, add the beef chunks, chile sauce, beef broth, and bay leaves. Bring to a boil.
  5. 5. Reduce heat and simmer for 3 hours, or until the beef is tender and shreds easily.
  6. 6. Season with salt to taste. Serve hot with tortillas, cilantro, and lime.
