Ingredients 

Main Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 bottle Guinness beer
  • 2 tablespoon tomato paste
  • 4 large carrots, sliced
  • 2 large potatoes, peeled and cubed
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the beef chunks and brown on all sides.
  2. 2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. 3. Pour in the beef broth and Guinness beer. Stir in the tomato paste.
  4. 4. Add the sliced carrots and cubed potatoes. Season with salt and pepper to taste.
  5. 5. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 2.5 hours, or until the beef is tender.
  6. 6. Serve hot and enjoy!
