- 1 cup Fresh Basil Leaves
- 2 cloves Garlic peeled
- ¼ cup Pine Nuts toasted
- ½ cup Grated Parmesan Cheese
- ½ cup Olive Oil
- 1 cup Mayonnaise
- 1 tablespoon Lemon Juice freshly squeezed
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper freshly ground
1. In a food processor, combine basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
2. With the processor running, slowly add olive oil in a steady stream until the mixture is smooth and well combined.
3. Transfer the pesto to a bowl and stir in the mayonnaise, lemon juice, salt, and black pepper until well combined.
4. Taste and adjust seasoning if necessary. Serve immediately or store in an airtight container in the refrigerator for up to one week.
