Ingredients

  • 1 cup Mashed Banana
  • 1 cup Grated Zucchini
  • 1 cup Sugar
  • ½ cup Vegetable Oil
  • 2 Eggs
  • 1 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix together the mashed banana, grated zucchini, sugar, oil, and eggs.
  3. In another bowl, combine the flour, baking soda, and salt. Gradually add to the banana mixture, stirring until just combined.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
