  • 3 ripe bananas
  • cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • ¾ cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mash bananas in a mixing bowl.
  3. Stir in melted butter.
  4. Mix in baking soda and salt.
  5. Stir in sugar, beaten egg, and vanilla extract.
  6. Add flour and mix until just incorporated.
  7. Pour batter into a greased muffin tin.
  8. Bake for 20 minutes or until a toothpick comes out clean.
