Ingredients

  • 1 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Unsalted butter, melted
  • 1 cup Sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • ½ cup Sour cream
  • 1 cup Mashed bananas (about 2 large bananas)
  • ½ cup Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mix the melted butter and sugar until well combined. Add the eggs and vanilla extract, and mix well.
  4. Stir in the sour cream and mashed bananas until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
