Ingredients

  • 3 ripe bananas mashed
  • cup melted butter
  • ½ cup sugar
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 ½ cups all-purpose flour

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
  4. Pour the batter into the prepared muffin tin. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove from oven and let cool in the tin for a few minutes. Transfer to a wire rack to cool completely.
