  • 2 large zucchinis
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 large eggs

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut zucchinis into thin strips.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip zucchini strips in the egg, then coat with breadcrumb mixture.
  6. Place coated zucchini strips on the baking sheet.
  7. Bake for 20-25 minutes or until golden and crispy.
