  • 2 medium zucchini sliced thin
  • 1 cup bread crumbs Panko preferred
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine bread crumbs, Parmesan cheese, garlic powder, salt, and black pepper.
  3. Dip zucchini slices in olive oil, then coat with bread crumb mixture.
  4. Place coated zucchini slices on the prepared baking sheet.
  5. Bake for 25-30 minutes, or until golden brown and crispy.
