  • 2 zucchinis medium-sized
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 eggs beaten
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut zucchinis into fry-like strips.
  3. In one bowl, combine panko breadcrumbs and grated Parmesan cheese. In another bowl, beat the eggs.
  4. Dip zucchini strips into the beaten eggs, then coat with the panko mixture. Place on the prepared baking sheet.
  5. Season with salt and black pepper.
  6. Bake for 20-25 minutes, or until golden and crispy.
