Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 cup shredded coconut sweetened or unsweetened

Instructions 

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, salt, and pepper. In another bowl, beat the eggs. In a third bowl, combine the panko breadcrumbs and shredded coconut.
  3. Dip each shrimp into the flour mixture, then the beaten eggs, and finally coat with the panko-coconut mixture. Place on the prepared baking sheet.
  4. Bake for 12-15 minutes, or until the shrimp are cooked through and the coating is golden brown.
  5. Serve immediately with your favorite dipping sauce.
