  • 2 slices Bread Whole grain or sourdough
  • 1 Avocado Ripe
  • 2 Eggs
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 pinch Salt To taste
  • 1 pinch Black Pepper To taste
  • 1 pinch Red Pepper Flakes Optional

Instructions 

  1. 1. Toast the bread slices until golden brown.
  2. 2. Mash the avocado in a bowl and mix with lemon juice, salt, and black pepper.
  3. 3. Spread the avocado mixture evenly on the toasted bread slices.
  4. 4. Bring a saucepan of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes or until the whites are set and the yolks are still runny.
  5. 5. Use a slotted spoon to remove the poached eggs from the water and place them on top of the avocado toast.
  6. 6. Sprinkle with red pepper flakes if desired and serve immediately.
