Ingredients

  • 2 ripe avocados
  • 1 cup fresh basil leaves
  • ½ cup grated Parmesan cheese
  • cup pine nuts toasted
  • 2 cloves garlic
  • ¼ cup olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. Cut avocados in half, remove the pit, and scoop out the flesh.
  2. 2. In a food processor, combine avocado, basil, Parmesan, pine nuts, and garlic. Pulse until smooth.
  3. 3. With the processor running, slowly add olive oil and lemon juice. Blend until creamy.
  4. 4. Season with salt and pepper to taste.
  5. 5. Serve immediately or store in an airtight container in the fridge for up to 2 days.
