Authentic Mole Sauce Recipe

- 2 tablespoon vegetable oil
- 1 cup chopped onion
- 3 cloves garlic, minced
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 cup crushed tomatoes
- 2 tablespoon peanut butter
- 1 oz dark chocolate, chopped
- 2 cups chicken broth
- 1 teaspoon salt
Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic, chili powder, cumin, and cinnamon. Cook for another 2 minutes.
Stir in the crushed tomatoes, peanut butter, and chopped chocolate. Cook until the chocolate is melted and the mixture is smooth.
Gradually add the chicken broth, stirring constantly. Bring to a simmer and cook for 1 hour, stirring occasionally.
Season with salt to taste. Blend the sauce until smooth using a blender or immersion blender. Serve warm.
