Ingredients

  • 4 Poblano Peppers
  • 1 cup Cheese (Monterey Jack or Queso Fresco) shredded
  • 3 Eggs separated
  • ½ cup Flour
  • 1 cup Oil for frying

Instructions 

  1. Roast the poblano peppers until the skin is charred. Place them in a plastic bag to steam for 10 minutes, then peel off the skin.
  2. Make a slit in each pepper and remove the seeds. Stuff each pepper with cheese.
  3. Beat the egg whites until stiff peaks form. In a separate bowl, beat the yolks and fold them into the whites.
  4. Heat the oil in a skillet. Roll each stuffed pepper in flour, then dip in the egg mixture. Fry until golden brown.
  5. Drain on paper towels and serve hot.
