Ingredients 

Main Ingredients

  • 2 pounds potatoes Yukon Gold or red potatoes, peeled and sliced
  • 6 slices bacon diced
  • 1 cup onion chopped
  • ¼ cup white vinegar
  • ¼ cup water
  • 3 tablespoons granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside to cool.
  2. 2. In a skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  3. 3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. 4. Stir in the vinegar, water, sugar, Dijon mustard, salt, and pepper. Bring to a boil, then remove from heat.
  5. 5. Slice the cooled potatoes and place them in a large mixing bowl. Pour the hot dressing over the potatoes and gently toss to coat.
  6. 6. Add the cooked bacon and chopped parsley. Toss gently to combine. Serve warm or at room temperature.
