Ingredients

  • 2 cups Shredded Cheddar Cheese
  • 1 cup Diced Tomatoes with Green Chilies drained
  • 1 cup Milk
  • 1 tablespoon Butter
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Chili Powder

Instructions 

  1. In a saucepan, melt the butter over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the diced tomatoes with green chilies, ground cumin, salt, and chili powder. Cook for 2-3 minutes.
  5. Reduce the heat to low and gradually add the shredded cheddar cheese, stirring constantly until melted and smooth.
  6. Slowly add the milk, stirring until the mixture is smooth and creamy.
  7. Transfer the queso to a serving bowl and serve warm with tortilla chips.
