Ingredients 

Empanada Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup cold butter cut into small cubes
  • cup cold water

Filling

  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 lb chicken breast cooked and shredded
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ cup chicken broth
  • ¼ cup green olives chopped
  • 1 egg beaten, for egg wash

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt. Add cold butter and mix until crumbly. Gradually add cold water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Heat olive oil in a pan. Sauté onion and garlic until soft. Add shredded chicken, cumin, paprika, and chicken broth. Cook until liquid is absorbed. Stir in chopped olives. Let cool.
  4. Roll out dough on a floured surface. Cut into circles. Place filling in the center of each circle. Fold and seal edges with a fork. Brush with beaten egg.
  5. Place empanadas on a baking sheet. Bake for 20 minutes or until golden brown.
