Ingredients

  • 2 cups shredded chicken
  • 4 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • ¼ cup chopped cilantro
  • ¼ cup chopped peanuts

Dressing Ingredients

  • ¼ cup soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions 

  1. 1. In a large mixing bowl, combine the shredded chicken, mixed greens, shredded carrots, sliced cucumbers, chopped cilantro, and chopped peanuts.
  2. 2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the dressing.
  3. 3. Pour the dressing over the salad and toss to combine.
