Instructions
Preheat oven to 400°F (200°C).
In a mixing bowl, combine diced apples, sugar, cinnamon, and lemon juice.
Roll out puff pastry on a floured surface and cut into squares.
Place a spoonful of apple mixture in the center of each square.
Fold the pastry over to form a triangle and seal the edges with a fork.
Brush the tops with beaten egg.
Place turnovers on a baking sheet and bake for 20-25 minutes, until golden brown.
Let cool slightly before serving.
