Main Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1 cup all-purpose flour
- ½ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup unsweetened applesauce
- ¼ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 apple, peeled and diced
Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
In a bowl, combine oats and milk. Let sit for 10 minutes.
In another bowl, mix flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Add applesauce, oil, egg, and vanilla to the oat mixture. Stir well.
Add wet ingredients to dry ingredients. Stir until just combined.
Fold in diced apple.
Divide batter evenly among muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
