Meatballs
- 1 lb Ground beef
- ½ cup Uncooked white rice
- 1 Egg beaten
- 1 teaspoon Garlic powder
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Soup
- 8 cups Beef broth
- 2 Carrots peeled and sliced
- 2 Potatoes peeled and diced
- 1 Zucchini sliced
- 1 Onion chopped
- 1 can Tomatoes diced
- 1 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a mixing bowl, combine ground beef, rice, egg, garlic powder, salt, and black pepper. Mix well and form into meatballs.
In a large pot, bring beef broth to a boil. Add meatballs and reduce heat to a simmer. Cook for 20 minutes.
Add carrots, potatoes, zucchini, onion, diced tomatoes, cumin, oregano, salt, and black pepper to the pot. Simmer for another 20 minutes or until vegetables are tender.
Serve hot and enjoy!
