- 2 cups mashed potatoes leftover or freshly made
- 1 cup shredded cheddar cheese
- ¼ cup cooked bacon bits
- 2 tablespoons chopped green onions
- 1 large egg beaten
- ½ cup breadcrumbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
In a mixing bowl, combine mashed potatoes, cheddar cheese, bacon bits, green onions, and beaten egg. Mix well.
Add breadcrumbs, salt, and black pepper to the mixture. Stir until well combined.
Form the mixture into small patties, about 2-3 inches in diameter.
Preheat the air fryer to 375°F (190°C).
Place the potato cakes in the air fryer basket in a single layer. Cook for 10 minutes, flip them over, and cook for an additional 10 minutes or until golden brown and crispy.
Remove from the air fryer and let cool slightly before serving.
