Main Ingredients
- 1 large eggplant cut into fries
- 1 cup breadcrumbs panko preferred
- ½ cup parmesan cheese grated
- 2 large eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon olive oil for spraying
Preheat your air fryer to 375°F (190°C).
Cut the eggplant into fry-shaped pieces.
In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, parmesan cheese, garlic powder, paprika, salt, and pepper.
Dip each eggplant fry into the beaten eggs, then coat with the breadcrumb mixture.
Place the coated eggplant fries in the air fryer basket in a single layer. Spray lightly with olive oil.
Air fry for 15-20 minutes, shaking the basket halfway through, until golden and crispy.
Serve hot with your favorite dipping sauce.
