  • 2 avocados ripe but firm
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat your air fryer to 400°F (200°C).
  2. Cut the avocados in half, remove the pit, and slice each half into 4-5 wedges.
  3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with salt and pepper.
  4. Dip each avocado wedge in flour, then egg, then panko breadcrumbs, ensuring each piece is well-coated.
  5. Place the breaded avocado wedges in the air fryer basket in a single layer. You may need to do this in batches.
  6. Air fry for 10 minutes, or until golden brown and crispy. Serve immediately.
